Today my page will host the recipe of our friend, more precisely Valentina of Il Brutto Broccolo (http://www.ilbruttobroccolo.it/– https://www.facebook.com/ilbruttobroccolo/). More precisely, I am talking about stuffed eggplants.
In my pantry, however, I did not have all the necessary ingredients, but the recipe inspired me a lot, so, as is often the case, I did virtue needs and arranged with what I had.
I used black olives instead of those taggiasche, adding a crunch of various oilseeds to tastily, instead of the yeast, and put normal breadcrumbs instead of rice one.
